Dried Tomatoes in Oil Recipe

Ingredients:
1/2 cup olive oil
1/4 cup wine vinegar
2 teaspoons of each salt and sugar
1 teaspoon of white pepper
1/4 teaspoon crushed garlic, dried
oregano and dried basil
100grams sun dried tomatoes

Directions:
Put all engredients except tomatoes in bowl or blender and mix/blend well.
Steam tomatoes or dip into boiling water for 30 seconds and drain.
Place tomatoes into sterilised 500ml jar
Pour rest of ingredients over tomatoes and seal jar
Serve straight from the jar. Drained and used as a compliment to sandwiches or on dry biscuits As an addition to soups, casseroles etc.
