Ingredients:
1 tablespoon butter1 tablespoon finely chopped onion 1 tablespoon flour 1 cup(1/4 L) well-seasoned Beef Stock or bouillon 2 cups(1/2L) milk 3/4 cup(1 3/4 dL) grated Cheddar cheese 2 teaspoons paprika
Directions:
Melt the butter in a pot, add the onion, and cook slowly until limp. Stir in the flour and continue to cook for 3 minutes, stirring. Slowly add the seasoned stock and milk, and heat to the boiling point, stirring frequently. Stir in the cheese and paprika and whisk until the cheese has melted and the soup is very hot. (4 cups This is a very nice change from meat and vegetable soups. The paprika adds good color.
