Mincemeat Cookies Recipe

  Cookie

Ingredients:
1 quart jar mincemeat
1 cup butter or margarine
1 cup shortening
2 cups sugar
1 cup brown sugar
4 eggs
2 teaspoons vanilla
6 cups flour
2 teaspoons baking soda
1/2 teaspoon salt

Directions:
Cream butter, shortening and sugars. Beat in eggs and vanilla. Combine flour, baking soda and salt; add gradually to creamed mixture, mixing until well combined. Cover and refrigerate at least 1 hour. When ready to bake, preheat oven to 375 degrees. Form dough into walnut sized balls; place about 2 inches apart on ungreased cookie sheets. Make a small indentation with a spoon and fill (not too full) with mincemeat. Bake at 375 degrees for 10 t0 15 minutes.
Makes a BUNCH!
