VENISON SCALLOPINE Recipe

  Pasta

Ingredients:
1 1/2 lb. piece venison steak
Flour, seasoned with salt & pepper
4 tbsp. olive oil
2 tbsp. butter
1 clove garlic, minced
Sprinkling of sage
Sprinkling of thyme
1/2 c. Chenin Blanc wine
1/2 c. water
Salt & pepper to taste

Directions:
Slice venison into serving size pieces and pound well. Coat pieces well with flour mixture. Heat oil and butter in frying pan, then add venison and brown on both sides. Add garlic and season to taste with salt and pepper. Sprinkle with sage and thyme. Pour over wine and water, then cover and bake at 350 degrees for 45 minutes to 1 hour until tender. Serves 4.
