salad nicoise Recipe

  Seafood

Ingredients:
fresh tuna steak
lettuce (a nice decorative one)
eggs (hen, or quail for a change)
new potatoes
Italian flat leaf parsley
Spanish (red) onion
fresh green beans
cherry tomatoes

Dressing:
olive oil
sherry vinegar
mustard powder
salt
freshly gorund black papper (FGBP)

Directions:
Boil potatoes with skin on until tender. Drain. String beans and cook lightly. Boil eggs to hard boiled, cool, shell and halve or quarter them. Slice cherry tomatos in half. Wash lettuce and parsley. Slice red onion thinly. Grill tuna on the BBQ with a little olive oil brushed on until med rare.Pile all ingredients onto plates (great colours), thickly slice warm tuna, put on top. Blend dressing ingred and pour over. Cooked ingredients are nice a bit warm, nice contrast with the salad.
