Baked Eggplant Recipe | |

Ingredients:
EggplantMayonnaise 1/3 cup saltine cracker crumbs 1/3 cup grated parmesan cheese (cheddar cheese can also be used)
Directions:
Cut eggplant into 1/2 inch slices. Spread slices on both sides with mayonnaise. Dip slices into mixture of crackers and parmesan cheese. Bake for 15-20 minutes on cookie sheet at 400 degrees. |
