POTATISBULLAR (Swedish Potato Dumplings) Recipe

  Swedish Pork

Ingredients:
1/4 c. butter or margarine
2 egg yolks
1/2 c. fine dry bread crumbs
1/2 c. firmly packed cooked mased potatoes
1/4 tsp. salt
1 c. ham or luncheon meat, diced into 1/2" cubes

Directions:
Cream butter and beat in egg yolks. Stir in bread crumbs, potatoes, and salt. Mix thoroughly. Knead and shape into a long roll. Cut off pieces about the size of a walnut. Flatten each piece in the hand and place a cube of meat in the middle. Shape into a round dumpling enclosing meat completely. Cook, uncovered, in simmering soup or simmering water for 10 minutes. Cover and cook for 5 minutes longer. Makes 6 servings.
