Ingredients:
1/2 cup brown sugar,firmly packed1 tablespoon cornstarch 1 20-oz. pkg. frozen peach slices, thawed 1 tablespoon freshly squeezed lemon juice Topping: 1 cup all-purpose flour 1/2 cup granulated sugar 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1/4 cup butter or margarine 1/2 cup milk 1/4 teaspoon freshly grated nutmeg Heavy cream, optional
Directions:
Prepare filling: In 2-quart saucepan combine brown sugar, cornstarch and 1/2 cup water. Bring to boil over medium heat, stirring constantly. Remove from heat; stir in peaches and lemon juice. Spoon mixture into 1 1/2 quart round baking dish. Heat oven to 350 degrees F. Prepare topping: In medium-size bowl combine flour, sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs; stir in milk until well blended. Spread dough over peach mixture in baking dish; sprinkle with nutmeg. Bake 30 to 35 minutes until golden. Serve with heavy cream, if desired. Makes 8 servings.
