Ingredients:
8 fish fillets (2 lbs.)1 qt. water 1/2 tsp. hot sauce 2 c. yellow cornmeal 1 c. flour 2 tsp. salt 1 tsp. white pepper 1 tsp. garlic powder 1 tsp. paprika Vegetable oil
Directions:
Combine first 3 ingredients. Cover & refrigeratoe 1 hour; drain. Combine cornmeal & next 5 ingredients in plastic bag. Add fillets, one at a time, shaking well to coat completely. Pour oil to depth of 2-3" in Dutch oven; heat to 375. Fry fish, a few at a time, about 4 minutes on each ise or until golden brown. Drain well onpaper towels. Serve immediately. Serves 8. |
