twice baked potatoes Recipe

Ingredients:
4 baked potatoes
1/2 cup blue cheese crumbled
0r 1/2 cup cheddar (I prefer sharp but medium will do)shredded
Your favorite mashed potato recipe...
dabs of butter or margarine
Salt and pepper

Directions:
Cut the freshly baked potatoes in half : remove the potato meat, keeping the shell intact.
Mash the potatoes using your own favorite recipe.
Add the cheese and blend in.Do not overwork the potatoes.
Salt and pepper remembering that the blue cheese is quite salty. I like a lot of pepper.
Put the potato mixture back in the shells, dab with butter or margarine. Put under the broiler for 5 minutes or until the cheese is melted. Enjoy
I sometime add roasted garlic or onions to the potato mixture.
