Southern Sausage Casserole Recipe

  Brunch

Ingredients:
2 1/2 cups herbed croutons or packaged stuffing mix
2 cups shredded cheese
1 lb. sausage
6 eggs
2 1/2 cups milk
1 can cream of mushroom soup
1 small can mushrooms
3/4 teaspoon dried mustard

Directions:
Place croutons in buttered 9 x 14 casserole dish. Top with cheese. Cook sausage, breaking it up into fine pieces. Drain grease. Put sausage on top of cheese. Beat eggs. Mix with remaining ingredients. Pour over sausage and cheese mixture. Refrigerate overnight. Bake at 300 degrees for 1 1/2 hours. Great for breakfast or brunch.


Note: The original recipe called for 2 lbs. of sausage, but I found that 1 lb. was enough for my family. Also, sometimes I do not add the can of mushrooms or the dried mustard. I just add a dash of regular mustard or else none at all. Hope you enjoy this! We like it.
