*Kombu is a kind of seaweed. It makes good soup stock and also improves the digestability of beans. You can find it at most natural-food stores. also, this makes for a very hearty soup. To make coconut milk-Grate 1 whole coconut;add 1 cup of warm water and let stand for 15 minutes. strain mixture through a fine sieve, press on coconut to squeeze out all of the milk. Canned unsweetened coconut milk is available in most supermarkets. |

This cannelloni is made with crepes, which give the finished dish a delightful texture. It can also be made with the pasta that is sold as cannelloni, if you can find it; or make your own. The same filling could go into manicotti and ravioli. |

When I was growing up my Mother and Father would use the same stuffing for any filled pasta; manicotti, stuffed shells, cannelloni, ravioli and sometimes even in their lasagna. They used a simple stuffing made with a mixture of ricotta cheese and sautéed hamburger. It was good, but not at all adventurous. However, they did use the crêpes more often than dried pasta shells. |
