| Whipped Garnet Yams with a Pecan Praline Crust |

Candied yams are traditional on the Thanksgiving table, but this winter root vegetable is a colorful and welcome addition to the Christmas table, too. For years, I have taught Thanksgiving classes around the country, and every time I demonstrate this recipe and the students sample the dish, they tell me these yams are the best they have ever tasted. They are lightened with eggs and enriched with butter and brown sugar. But the praline crust is what makes this casserole divine. Hot from the oven, the meltingly lush topping is bubbly in the center and browned to a caramelized sugary-crisp at the edges. If time permits, you can make the whipped yams and the topping a day in advance. Cover and refrigerate them separately. Remove the yams and topping an hour before you plan to bake the casserole. Warm the topping and spread it over the yams just before baking. |

A boat neighbor, Gene Boone, Suggested that this was a way he liked sweet potatoes. We had them with steak and salad. It was like having desert with the main course.
I loved them, and I'm not a big sweet potato fan.
You can also place the filling into a casserole then spirinkle with the chopped nuts. Finish with a few extra pats of butter after you've taken it out of the oven. |

The concentrated flavor of dried portobello mushrooms inhabits this exotic version of mashed potatoes. If you have a mini-chopper, use it to mince the mushrooms; if not, you will have to use a knife, as most full-size food processors are too large to chop small quantities evenly. The mushrooms don't require presoaking, because they will hydrate as they cook with the potatoes. |

This item is a MAJOR hit with everyone. It's taking all of the work out of everyone having to do the dreaded, but much loved baked potato! My husband always said he'd pay extra at a restaurant if they would blend his potato for him! I often make this a day or two in advandce and just up the oven time to heat when needed. I have done this in one baking dish also. I have also done it in the microwave when it was already to go in the oven and the oven didn't work. I won't take as long in the microwave so keep an eye on it. |

The acorn squash can be cooked up to 2 days in advance and kept refrigerated, tightly covered with plastic wrap. Do no glaze it until just before serving, adding 5 minutes to the baking time. |
