This clear sauce is delicious and works great with a vegetable or seafood stir fry. A combination of mushrooms, carrots, bok choy, shrimp or crab, green or white onions makes for a wonderful and simple dish when served with rice.
Experiment:= Lighter for chicken and pork.
Darker for beef and game.
Sweeter for Dim Sum.
The commercial recipe uses Black bean paste.
The light soy and honey, the taste of peanut dominates.
Note: To extract juice from ginger, grate a 1/4 pound piece of gresh gingerroot in cheesecloth. Tie grated gingerroot in cheesecloth or place in paper coffee filter and squeeze.
