| Mole Sauce (for Pork Mole) |

Mexican |
|
Deb, I have a recipe for Pork Mole. Mole is a Southern Mexican sauce that is put on all kinds of things such as meats, eggs, etc. I'm sure it's been put on veggies too. My suggestion would be to roast veggies and spoon this sauce over top. I'd use eggplant, zucchini, cauliflower, etc.
I'm going to include the entire recipe for Pork Mole but for your purposes, just leave out the pork loin and do everything else exactly the same to make the sauce.
I love the sauce so much that I double the sauce recipe every time and have it to serve over other things. |

This is easy to whip up in a blender, but you have to serve it immediately. And don't worry about these egg yolks; they're effectively cooked by the very warm butter and citrus acids. Try this atop fried oysters, beef tenderloin, or grilled salmon. |

If you're looking for a delicious all-purpose barbecue sauce, look no further. As with all sweet sauces, you must be careful during cooking. Use this sauce only during the last 5 minutes when grilling over direct heat; for indirect grilling, the sauce will be fine on the grill for up to half an house without burning. |

Dessert Sauces |

This is an incredibly versatile sauce and cake filling, with enough body to stay put when spread over cake layers, and just thin enough to sauce ice cream. When I spoon it over simple baked fruits, like apples or figs, it becomes a whole new sauce as it mixes with the concentrated fruit juices from the roasting pan. This recipe also perfectly demonstrates how the addition of a couple of simple ingredients to a base heightens its flavor. Here, a squeeze of lemon juice and a little salt bring out flavors of the butter and caramelized sugar. |
