Chicken on the bone should be used to add a rich flavor to the broth. But it is handy to know that 1 pound of boneless chicken yields about 4 cups of cooked chicken. To avoid a possible chlorine taste in broth, make it with spring or filtered water. |

This is an incredibly simple recipe. It's basically baked chicken, intensely flavored with garlic. It is moist, though and will fall off the bone if cooked long and slow as directed. If you're looking for a chicken with a sauce, this is probably not the recipe you desire. Hope you enjoy! |
