| ITALIANO FRITTATA DEL PAESE |
Brunch |
Italian |
|
This is a country style Frittata but as you know you can throw anything in it. Our favorites growing up and quite often in our school lunches were as follows: potato & egg, onion & egg, peppers & egg, tomato & egg, sausage & egg, chopped ham & egg, even hot dogs & egg; or any combination of them. |

If towards the end you find you added to much stock. It's ok it should cook out. And also let it rest for a couple mins. It will tighten. Good Luck |

You could either add the peppers or substitute them for one of the other vegetables. |
| Sweet Basil |
Brunch |
Italian |
|
You can serve this with a hearty Italian or French bread and a glass of red table wine and have it this way or serve it as a salad with a meal or as an extra with a sandwich plate instead of pickles. The sweet basil can also be torn into small pieces and added to a regular lettus garden salad and topped with your favorite dressing. This is my recipe and I would be interested to know how you liked it when you give it a try......Enjoy........Ray |

You can add whatever vegetables you like to this. I especially like to add red bell peppers. Also, you can use left-over baked or boiled potatoes. American style ham or bacon may be substituted for the pancetta or prosciutto. |
