Relish Recipes

You could put apple slices and pineapple slices in food processor, or chop pineapple finely, by hand

Makes about 3 cups.

Recipe can be doubled, tripled, etc.

*Tip: *2 packages (20 oz. each) frozen whole kernel corn or 4 cans (16 oz. each) whole kernel corn can be substituted for the fresh.

Lemon gives this relish of ripe, sweet peppers a fruity taste.

Note: Canned chipotle chilies (smoked and dried jalapenos), packed in adobo sauce, are available in Hispanic markets and the imported food aisle of large supermarkets, such as Omni and Cub Foods. The remainder of the can may be transferred to a jar and refrigerated for several months.

Like most recipes of this type, it's best made ahead of time so the flavors have time to blend. This is a delightfully refreshing relish.
