Chicken Stew Recipes

This is a basic recipe. Recipe can be varied by adding,toward the end, one cup of one of the following okra, cooked white beans, potatoes, green beans, etc...

If the stew is not hot enough for you, add a bit of La Victoria salsa jalapeno. This is wonderful, but be careful. It's hot! Pueblo tradition calls for the addition of corn or potatoes to this dish. I prefer it without. It makes a wonderful filling for enchiladas. Patty and I simply serve a big green salad with this dish...and a pile of wheat tortillas. Originally prepared with turkey, it is still served with turkey at fiestas in Mexico, especially at Christmas and weddings. With the time and care required to prepare this sauce, you may wish to double the amount to have extra on hand for burritos and enchiladas, or to freeze for later use. Enjoy!!

You definitively have to use guascas if you want to call your soup Ajiaco. It's not easy to get them out of Colombia, but they give this soup its characteristic flavor.

this is mild flavored and not to hot! we really enjoyed it.

If squirrels are scarce or your hunters have no time to go after them, chicken makes a good substitute. The Brunswick Stew goes by different names. Squirrel Stew is one, and in some Carolina communities, it is called Squirrel Muddle. For a large crowd the stew is cooked outdoors over coals in a big iron kettle. Pot pie is a family favorite and this recipe is a way to rid the fridge of leftovers (Turkey,beef or pork can substitute chicken)

Easy and always a hit. It's great for leftover turkey after holidays.

This is really not hard to do, just sounds very time consuming, but I guarantee it will be a hit, everyone that I have made it for loves it, recipe can be doubled or triples with no problem, but be sure you have quite a large pot. Enjoy
