This fabulous recipe is well worth the trouble. It is great even when you can't get every single ingredient. The servings are generous, since is is intended to be a vegetarian meal or to be served with fish or chicken.

Note: Bordelaise style in no way refers to the classic French Bordelaise Sauce which is a fortified Espagnole most commonly used for grilled meats and game. In the case of seafood, ALLA BORDELAISE refers to a sauce composed of white wine, garlic, shallot, and green onion or scallion. This recipe will be served over pasta so a creamy wine and herb sauce will be created with the addition of some heavy cream and some extra butter. |

To make coconut milk-Grate 1 whole coconut;add 1 cup of warm water and let stand for 15 minutes. strain mixture through a fine sieve, press on coconut to squeeze out all of the milk. Canned unsweetened coconut milk is available in most supermarkets. |

When I make this dressing I use my own Chardonnay Wine Vinger. I make it using Fresh Basil from my garden, about three large sprigs. Place this in a pretty bottle with a tall neck. Then add 1 cup plain vinger and one bottle of chardonnay wine. Use an inexpensive version. Let it sit for two weeks. |
